Kasvio – cooking as storytelling

Kasvio restaurant opened on the 2nd of April!Kasvio (Herbarium in Finnish), a plant-based restaurant, is a new project of me and my team at Metaal Kathedraal in Leidsche Rijn, Utrecht. In collaboration with artists we create a unique environment that supports the heart of Kasvio: cooking as storytelling.

The Herbarium or book of plants, is a metaphor for what inspires us – our continuous exploration of plants, the environment and how issues concerning our eating habits affect the planet, animals and our health. At Kasvio we use organic ingredients. The herbs come from Metaal Kathedraal’s garden and the seasonal vegetables come from local organic growers. We work with producers who share our vision of food as craftsmanship, made with care and with respect for the environment.The dinners at Kasvio are the creative engine driving the kitchen forward.

Our dishes change with the seasons and evolve thanks to the collective exploration of ingredients as well as the inspiration we get from cooperating with the communities and artists around us. Lunch at Kasvio transforms the experimental dishes from Kasvio dinners into comfort food; with no concessions to quality or flavour.
